End of the Summer party at school

I was very skeptical when I heard they were going to make cupcakes for their end of the summer party, but Miss Ashley and Miss Ruthie did a great job and making it fun!!  They all sat in a circle and took turns doing each step in making the batter!!

After their naps they are going to do tie dye shirts…again, I was skeptical.  Miss Ashley showed me a cool, no mess way of doing them with sharpies and alcohol.  Can’t wait to see how they turn out!

Glazed Meatloaf

OMG found a yummy recipe...a KEEPER!! Called Glazed Meatloaf II from Allrecipes.com

Ingredients
1/2 cup ketchup \
1/3 cup brown sugar
1 tablespoon lemon juice
1 teaspoon dry mustard (Dijon)
2 pounds lean ground beef
3 slices bread, shredded (3/4C Italian bread crumbs)
1/4 cup diced onion (french fried onions)
1 egg, beaten
1 cube beef bouillon, crumbled (splash of balsalmic vinegar)
3 tablespoons lemon juice (Instead of 3 Tbl, just a splash)

Directions
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine ketchup, brown sugar, 1 tablespoon lemon juice and dry mustard until smooth.
In a large bowl, combine ground beef, shredded bread, onion, egg, bouillon, 3 tablespoons lemon juice, and 1/3 cup of the ketchup mixture until well mixed. Form into a loaf and place in a 9x5 inch loaf pan.
Bake 1 hour. Pour off fat. Pour reserved ketchup mixture over loaf. Bake 10 minutes more.

I made the substitutions that are in parenthesis and used a muffin pan instead of making a loaf!

A family favortie recipe.

Discovered a recipe on the back of the green enchillada sauce can...very yummy and apparently will be on the weekly dinner list.

1lb of shredded chicken, cooked
1 can of green sauce
1 can of green chiles
1 pkg of cream cheese
shredded cheese
tortillas

after cooking and shredding the chicken, put in skillet and heat with cream cheese and chiles until all is melted and yummy. Fill about 6 tortillas and line them in a casserole dish and cover with the green sauce and then with shredded cheese and cook at 350 for about 20 mins.
My alteration is to add Taco Seasoning to the shredded chicken and then again once it's mixed with the cream cheese and chiles...just a little to taste.
